An Introduction to Fine Wine
Intensive Introduction (suitable for beginner to intermediate students)
Taught by John Middleton.  Click here for John's profile.

This course is intended to give participants a thorough grounding in how to assess and enjoy fine wine from around the world.  All aspects of fine wine will be covered: different wine styles, wine regions of the world, production techniques, key grape varieties, wine-classification systems, storing and serving wine, matching wine with food, and the cultural importance of wine.  In addition to the cognitive aspects of this fascinating subject, a systematic wine-tasting technique will also be developed over the duration of the course via the tasting and assessment of 40 different fine wines from around the world.  The wines tasted and assessed will include the full gamut of styles: red, white, rosế, sparkling and liqueur wines.  Details of these wines will be recorded on structured tasting notes.  All necessary course materials, such as wines, glasses, tasting notes, spittoons and detailed handouts will be supplied.  The enrolment is limited to 15 participants to engender a positive group dynamic that enhances the Socratic and experiential learning techniques to be utilized.  This course is suitable for both the interested layperson and hospitality professional alike and is intended to be relaxed, informal, and good fun.

At the end of the course, participants will:

  • have developed a competent wine-tasting technique

  • be aware of the main styles of fine wine and how they are made

  • be familiar with the world's premier fine wine regions

  • comprehend the principles of wine storage and service

  • understand the key tenets of matching food with wine

  • appreciate the importance of wine as a cultural touchstone

  • be able to identify up to 12 different grape varieties in a "blind" tasting in the final session of the course.
